Interpolation makes intelligent decisions about how to fill in new pixels based on the surrounding ones, which is why the result looks noticeably better than a basic stretch. What it cannot do is invent detail that was never captured in the original image — texture, edges, or fine features that were lost to blur or low resolution in the source photo.
